Puff Pastry Shortening


Nothing demands more than puff pastry. The elasticity, plasticity and stability of the fat is the key to giving puff pastry a light, layered texture that melts in the mouth.
EsSence™ Puff Pastry shortening from Aarhus United has been specially designed for this purpose. A non-hydrogenated, zero trans vegetable fat, that contributes the solid part of the oil phase in puff pastry formulations and provides the plastic qualities that make pastry rise to every occasion. A high performing non-waxy roll-in shortening with excellent plasticity. Great for classic puff pastry, providing excellent "lift".
EsSence™ Puff Pastry shortening yields light, crisp and flaky laminated pastries with outstanding mouth feel, all without trans fat or hydrogenation.
During the lamination process EsSence™ Puff Pastry shortening prevents cracking in the thinly folded pastry layers that give puff pastry it’s well known baked characteristics.

Composition
All vegetable, non-lauric, no-trans, non-hydro, non-dairy, 20% less sat fat than the "gold standard" butter, kosher.
